Breakfast is Baking : Bacon & Cheese Pull-Aparts

On the weekends when our lives slow down a bit (but are still somehow jam-packed) I like to try and find time to actually make a family breakfast. I find it hard to make things that appeal to everyone in the family, however, as I am a sweets person (as is my Daughter) and my Husband is more of a savory person -- my Son, well he is picky either way and I never really know what he is or isn't going to eat.

When I first saw the recipe for Bacon & Cheese Pull-Aparts on the Pillsbury site, the picture alone made me want to try this out. So this past weekend I gave it a go and was pleasantly surprised. Okay -- so my kids didn't love it, but they tried it and I had given them yogurt and fruit as a side which they happily ate.

Another thing I loved about this recipe was that it took all of about 5-10 minutes to throw together and then just about 25 minutes in the oven. So easy! (I live for easy)

INGREDIENTS
1 egg
2 tablespoons milk
1 (16.3-oz.) can Pillsbury® Grands!® Flaky Layers Refrigerated Original Biscuits
1 (2.1-oz.) pkg. precooked bacon, cut into 1/2-inch pieces (I just used real bacon bits and eyeballed the amount)
3 oz. (3/4 cup) shredded Cheddar cheese
1/4 cup finely chopped green onions (4 medium)

DIRECTIONS
1. Heat oven to 350°F. Spray 11x7- or 12x8-inch (2-quart) glass baking dish with cooking spray. In large bowl, beat egg and milk with wire whisk until smooth.
2. Separate dough into 8 biscuits; cut each into quarters. Gently stir biscuit pieces into egg mixture to coat evenly. Fold in bacon, cheese and onions. Spoon mixture into sprayed dish; arrange biscuit pieces in single layer.
3. Bake at 350°F. for 23 to 28 minutes or until golden brown. Cut into squares.

When I made these, I took into consideration other reviews I had read and added a second egg to the mixture. When I make it again, and I WILL be making it again, I am going to keep with the 2 eggs in the mixture but then scramble a 3rd egg to pour over once I put it in the baking dish just to see if that helps with the egg distribution throughout the dish.

Otherwise, it was great the way it was and super delish with my must-have cup of coffee! This would make a great addition to a brunch party also.
